Kiley’s Quick(ish) Korean Beef

We like this recipe because we can use our garden vegetables and our Charolais beef. Truly a homegrown dinner! Healthy and tasty.

To make this recipe even quicker, don’t be afraid to use left over steaks or roast beef!

Ingredients for the Sauce:

  • 4 cloves of garlic chopped

  • 1 tablespoon fresh chopped ginger

  • 1/2 cup soy sauce

  • 1/4 cup honey

  • 2 tablespoons rice vinegar

  • 2-3 tablespoons Korean chili paste

  • 1 tablespoon toasted sesame oil

Combine all the above ingredients in a mason jar and shake well.

Ingredients for Stir Fry

  • 8 ounces of rice noodles ( you can serve this over rice if you prefer

  • 1 pound of round steak ( or beef of your choice- you can use leftover roast and steak to make this recipe even quicker)

  • 3 sliced shallots/or green onions

  • 2 tablespoons toasted sesame oil

  • 3 cups of mixed stir fry veggies ( your favorites combo)

  • 1/4 cup toasted sesame seeds

  • 1/2 cup fresh basil

Directions:

  • Cook the rice noodles (or rice) according to directions

  • Add one tablespoon of the oil to pan, cook vegetables until they start to soften, then add two tablespoons of the sauce to the veggies. Remove from pan.

  • In same pan add the rest of the sesame oil, add the shallots, and then the beef, until seared, 2-3 minutes.

  • Add the sauce to the meat and shallots, cook for about 2 minutes more.

  • Add the cooked vegetables and the noodles, cook for 2 more minutes or until noodles are coated with sauce. (Alternatively, you can serve over the rice.)
